Fruit Pizza

ingredients

Crust
  • 1/2 cup oil
  • 1/2 cup sugar
  • 1/2 cup powdered sugar
  • 1/2 cup butter
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tarter
  • 1 egg
  • 2 1/4 cup flour
  • 1/4 tsp salt
Topping
  • 1 8 oz cream cheese
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 2 cup cool whip
  • fruit (canned, fresh or frozen)
Glaze
  • 2 Tbsp lemon juice
  • 1/2 cup orange juice
  • 1/4 cup water
  • 1/2 cup sugar
  • 1 Tbsp cornstarch
  • dash salt

directions

Crust

Combine oil, sugar and butter. Mix well. Add egg. Add dry ingredients. Spread into greased 14 inch pizza pan or 10x15 jelly roll pan, sealing edges. Bake 12 minutes in 375 degree oven. Cool.

Topping

Blend cream cheese and sugar. Add vanilla. Fold in cool whip. Drain fruit. Spread cream cheese mixture over crust. Place fruit on top of cream cheese mixture.

Glaze

Mix sugar and cornstarch. Add remaining ingredients and boil for 1 minute. Cool slightly and pour over fruit. Refrigerate. Cut and serve.

If you are short on time you can substitute sugar cookie dough for the crust recipe
