Marinated Cheese
ingredients
- Marinade:
- 1/2 c olive oil
- 1/2 cup white wine vinegar
- 2oz diced, drained pimentos
- 3T parsley (fresh, chopped fine)
- 4T green onions (chopped fine)
- 3 cloves garlic (chopped fine)
- 1t sugar
- 3/4 t basil
- 1/2 t salt
- 1/2 t pepper
- Cheeses:
- 8oz sharp cheddar (block)
- 8oz cream cheese

Mix all of the marinade ingredients together and set aside.

Cut cheddar and cream cheese into 1 inch squares about 1/4 inch thick. Cream cheese cuts best if put in freezer for about 20 minutes before cutting. Stack cheddar and cream cheese together rotating cheddar and cream cheese.

Place stacked cheddar and cream cheese in 9x9 baking dish. Pour marinade over stacks and place in fridge for 8 hours.
