Easy Brunch Bake
Light and healthy alternative to the usual breakfast casserole.
ingredients
- 1 cup fat-free egg substitute
- 1 cup skim milk
- 4 oz. Italian bread
- 3/4 cup sliced cooked turkey sausage
- 3/4 cup shredded reduced-fat sharp cheddar cheese
- 1/4 tsp. freshly ground black pepper
- 3 canned whole pimientos, drained and julienned
directions
Preheat the oven to 350°. Spray an 8" square baking pan with nonstick cooking spray. In a medium bowl, combine the egg substitute and milk. Add the bread, sausage, 1/2 of the cheese and the pepper; stir until all of the bread is moistened. Pour the mixture into the pan; sprinkle evenly with the remaining cheese. Bake until the top is golden and a knife inserted in the center comes out clean, about 40 minutes. Serve, garnished with the pimientos.
