Chili Con Queso Dip
ingredients
- 1 lb. ground turkey, beef or chicken
- taco seasoning
- 7.5 oz can of Chipotle chiles in adobo sauce
- 2 tablespoons vegetable oil
- 1 cup chopped white onions
- 1/2 teaspoon cayenne
- 4 tablespoons all-purpose flour
- 1 large tomato, peeled, seeded and diced
- 15 oz. can of black beans
- 2 cups milk or cream
- 3 cups grated Cheddar
- 2 cups grated Pepper Jack
- 1 tablespoon hot sauce
- tortilla chips

Cook the ground meat and season with taco seasoning according to package instructions. Then set aside.

Roughly chop the Chipotle peppers and set aside.

In a large pot, heat the oil over medium heat. Add the onions and cayenne cook, stirring, until very soft, about 6 minutes. Add the flour and stir until thickened, 1 to 2 minutes.

Add the tomatoes, chopped chilies, beans and cook for 1 minute. Slowly add the milk or cream and stir until thick, 3 to 4 minutes. Add the ground meat, cheeses and cook, stirring, until melted and well incorporated.

Remove from the heat, add the hot sauce and other seasonings, to taste.

Serve with tortilla chips.
