Jambalaya
This is the bestest supper in a bowl!
ingredients
- 1/4 cup uncooked rice, rinsed
- 3/4 lb. shrimp or lobster, chopped
- 1 cup ham, diced
- 5 Tbsp. oil
- 1/4 cup butter
- 1 clove garlic, crushed
- 1/2 onion finely, chopped
- 1 celery stalk, chopped
- 4 large ripe tomatoes
- 1 green pepper
- 1 bay leaf
- 3 Tbsp. tomato paste
- 1 pint chicken stock
- 1 cup white wine
- oregano & salt & pepper

Cook shellfish and ham in hot oil on high for a few minutes then remove.

Cook onion in 3 Tbsp. of butter, add rice and sauté for a few minutes.

Add: seafood, ham, garlic, celery, tomatoes, green pepper, and bay leaf. Season with oregano and salt and pepper.

Bring stock to a boil, add the tomato paste and pour over rice. Bring to a boil, turn down to low and cook covered for 15 minutes.

Just before rice is ready add the wine and the remaining butter. Cover with the heat off and let stand for 2 minutes.

Transfer into a hot bowl and serve immediately.
