Christmas Creole Turkey (or chicken)

Delicious with fluffy parsleyed rice.

ingredients

  • 1 1/3 cup butter
  • 1 onion thinly sliced
  • 1 green pepper cut into strips
  • 3/4 cup thinly sliced celery
  • 3 tbsp flour
  • 1/4 tsp salt
  • 1/4 tsp paprika
  • 1 (20-oz) can tomatoes
  • 1 (6-oz) can tomato paste
  • 1/2 tsp horseradish, drained
  • 2 cup cut up turkey or chicken
  • 1 (10-oz) can sliced mushrooms drained

directions

Melt butter in large saucepan. Add onion, green pepper and celery. Fry gently until limp but not brown. Stir in flour, salt and paprika. Gradually stir in tomatoes and tomato paste; cook over medium heat, stirring constantly, until smoothly thickened. Add and mix in horseradish. Stir in turkey and drained mushroom and heat through.
