Baked Macaroni with Cauliflower
I’m sure everyone loved the traditional macaroni and cheese as a child. Here is a revved up recipe to serve adults. It’s very satisfying and goes well with a tossed salad.
ingredients
- 1 lb. of your favorite pasta, cooked
- 2 tablespoons butter or margarine
- 1 large onion chopped
- 1 clove garlic minced
- 1 head of cauliflower florets cleaned and cut into bite size pieces
- 1/2 cup parmesan cheese
- 8 oz of mozzarella shredded
- 8 oz Monterey jack shredded
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- salt and pepper to taste
- 3/4 cup milk
- 3 eggs

Preheat oven to 350 degrees. In a small bowl, beat milk and eggs together. Saute onions’ garlic and cauliflower in butter. Cook 10 minutes. Cook pasta as directed.

Toss all ingredients until well blended.

Fill baking dish and sprinkle additional parmesan on top. You can also sprinkle some extra mozzarella on top. Bake 35-40 minutes.
