Sausage Country Gravy
To great damage to my wasteline, my Grandmother taught me how to make this gravy. The trick - always use good quality ground pork and always use butter and whole milk only.
ingredients
- 2 T vegetable oil
- 1/2 lb Jimmy Dean bulk sausage
- 1/4 t cayenne pepper
- 1/2 t each: salt, pepper, garlic powder and onion powder
- 4 T butter
- 4 T flour
- 2 cups whole milk
- Additional salt and pepper to taste

In a large frying pan, heat oil over medium heat. Add pork and brown, breaking up the larger pieces as you go. Add all seasonings as you brown the meat. When done, remove the meat and set aside in a bowl.

Next, melt the butter in the frying pan. Add the flour and whisk until a roux forms. Cook roux about 2 to 3 minutes. Add the milk and whisk constantly until the milk starts to get thick. Add back the browned pork and any accumulated drippings. Cook until pork is heated through and gravy is thick. Serve immediately over biscuits for breakfast or a nice chicken fried steak.
