Low Fat Buttermilk Scones
ingredients
- 2 Cups All Purpose Flour
- 1/2 Tsp Baking Soda
- 1/2 Tsp Baking Powder
- 1/4 Cup plus 1 Tsp Sugar
- 1/4 Tsp Salt
- 3 Tbsp Cold Unsalted Butter
- 1/3 Cup Raisins or other dried fruit
- 1 Large Egg
- 1/2 Cup Buttermilk

1. Preheat oven to 400°

2. Cover a baking sheet with parchment paper or spray with nonstick spray

3. Sift Flour, add baking soda, baking powder, 1/4 cup sugar and salt.

4. Grate cold butter into flour and mix with fingertips

5. Add raisins or other dried fruit

6. Beat egg and milk add to mix
- 7
7. Knead briefly, just enough to moisten dough adding more buttermilk if necessary

8. Turn out on floured surface and pat into an 8“ circle about 3/4” thick

9. Sprinkle with the remaining 1 tsp sugar

10. Cut into wedges and place on baking sheet

11. Bake for 12 to 14 mins or until lightly brown.

Serve warm or at room temperature
