This one comes from Aunt Marty, so you know it is tasty!

ingredients

  • 1 medium red onion, chopped
  • 1 clove garlic, chopped
  • 1/4c fresh cilantro, chopped (to taste)
  • 1-2 fresh jalapeno peppers, chopped (to taste)
  • 1-3 cans green chilies (to taste)
  • 1T olive oil
  • 2T lime juice
  • 1/2t salt
  • 1/4t cumin
  • 1t red wine vinegar
  • 1T tomato juice
  • 1 1/2 lbs fresh tomatoes, chopped

directions

    1. Combine onion, garlic, cilantro, and jalapenos in processor. Pulse till finely chopped but not pureed. Put in bowl.

    2. Combine chilies, oil, lime, salt, cumin, vinegar, and juice in processor. Pull till chopped, but not too smooth. Add to onion mixture.

    3. Chop tomatoes by themselves. Keep them chunky.

    4. Mix everything together, adjusting seasoning to taste.

    5. Cover and refrigerate for about an hour before serving to let flavors mix.

notes

Aunt Marty uses a small can of chopped jalapenos. An easy way to chop herbs: put in a bowl and go at it with scissors!
