  • 1 tbsp and 2 tsp of vegetable oil
  • 2 - 1/2 pounds lean beef stew meat
  • 1/4 cup and 1 tbsp all purpose flour
  • 2 1/2 small onion, chopped
  • 5 cups sliced fresh mushrooms
  • 15 cloves garlic
  • 1 1/2 (6 oz) can tomato paste
  • 5 cups beef broth
  • 1 1/2 (12 fluid oz) cans or bottles Irish stout beer
  • 10 cups sliced carrot
  • 5 large potatoes, peeled and diced
  • 2 tbsp and 1-1/2 tsp cornstarch
  • 2 tbsp and 1-1/2 tsp cold water
  • 1/2 cup and 2 tbsp chopped fresh parsley

    Heat oil in a Dutch oven or large pot over medium heat. Coat beef cubes with flour, shaking off the excess. Fry beef cubes until browned on all sides. Remove from the pot. Add the onion and mushrooms to the pot and cook stirring constantly until onion is tender, about 3 minutes.

    Return beef to the pot and stir in tomato paste, beef broth, and beer. Add potatoes and carrots, cover, and simmer over low heat for about 1 hour. Mix together the cornstarch and cold water. Stir in the stew and simmer until thickened. Sprinkle with parsley and serve.
