Chicken Cacciatore
ingredients
- One Whole Chicken, cut up
- 2 Tablespoons Olive Oil
- 2 Tablespoons Butter
- 1 Large Onion, chopped
- 1 Green Pepper, chopped
- 1 Clove Garlic, minced
- 1/2 Cup Green Olives
- 1 Can Tomatoes
- 2 Teaspoons Italian Seasoning
- 3 Cups, Hot Cooked White Rice
- Salt and Pepper

Heat large skillet and add olive oil and butter. Season chicken pieces with salt and pepper and place in skillet until brown on all sides. Add chopped onions, garlic and peppers, cook until vegetables are tender and add the can of tomatoes, green olives and Italian Seasoning and cook until chicken is tender, about 30 - 40 minutes.
