On Saturday night Mom would start to prepare our meal for the following day. On Sunday mornings we would awaken to the heavenly smells of the best meat sauce ever! A quick trip to church, then it was time for dinner at 2:00.

ingredients

  • 4 Cans of San Marzano whole Tomato
  • 2 small cans of tomato paste
  • 3 TAB. of Olive Oil
  • 1 large onion (chopped)
  • 3 cloves of garlic (optional)
  • 1/2 Cup of Fresh Parsley
  • 1/2 Cup of Fresh Basil
  • 1 lb. Ground Veal
  • 1 lb. Pork (ribs or chops or both)
  • 1/2 lb. Italian Sausage
  • 1/2 lb. beef (your choice)
  • 2 tsp. Oregano
  • Salt and Pepper to taste

    Turn on heat in large pot. Add olive oil and onion. Cook until translucent.

    Add garlic cloves and cook just until fragrant. Do not let them brown. Add whole tomatoes, breaking them up as you stir. Then add the tomato paste.

    Add oregano, parsley and basil and salt. Reduce heat and let simmer for about 2 hours, stirring occasionally.

    In separate pan, brown Sausage, then add to sauce. Do the same for Veal, Beef and Pork, until all is incorporated into the sauce.

    Let sauce simmer for about 1 to 2 hours more.

    Serve with pasta of your choice!
