CHICKEN BURGUNDY

ingredients
- 4 boneless, skinless chicken breasts
- flour for dredging
- garlic powder
- salt and fresh ground pepper
- 1/2 lbs. mushrooms
- 1/4 cup scallions
- 2tbs. Olive oil
- 1/2 cup Chard or any red wine
- 1/3 cup Beef broth
- 1/2 cup mozzarella

Preheat oven to 350°

Flatten chicken breasts between two sheets of wax paper. Dredge chicken in flour. Brown chicken in skillet w/olive oil. Place in baking dish, sprinkle liberally with salt, pepper, garlic powder. Keep in oven waiting for remaining ingredients. In pan cook mushrooms and scallions just until tender, spoon over chicken. Heat wine and broth in pan till hot, spoon over chicken and mushrooms. Sprinkle with cheese, bake until cheese is melted.
