ingredients

  • 2 cups sugar
  • 1/2 cup very hot water
  • Custard:
  • 4 cups milk
  • 1/2 cup honey
  • 1/4 teaspoon salt
  • 6 beaten eggs
  • 1 teaspoon vanilla
  • dusting of nutmeg

    Stir sugar constantly over low burner 8-10 minutes until melted and straw colored.

    Remove from heat and slowly add hot water.

    Return to heat and stir until caramel colored.

    Pour immediately into ramekins, just enough to cover bottoms.

    Cool at room temperature.

    For custard:

    Combine milk, honey, salt, eggs, and vanilla.

    Beat well and pour into ramekins.

    Dust with nutmeg.

    Place cups onto a rack with a large baking pan.

    Add hot water to pan so that it covers the bottom of 1/2 inch cups.

    Bake 1 hour at 300°, until set in the center.

  • 13

    Serve at room temperature by loosening edges and inverting into serving bowls.
