Black Bean Salad/Dip

This is a salad, but I like it as a dip. Serve with tortilla chips.

ingredients

  • Dressing:
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 3 to 4 Tbsp fresh lime juice
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • Salad:
  • 2 cans (15 oz. each) black beans, drained/rinsed
  • 1 can (large) corn
  • 1/2 cup chopped fresh cilantro
  • 1 small red onion, chopped
  • 1 avocado, pitted/peeled, chopped
  • 2 large tomatoes, peeled/seeded and chopped
  • 2 fresh jalapeno’s, seeded and chopped

directions

Mix salad items. Mix dressing items. Pour dressing over salad, toss gently to coat.
