Black Bean Salad/Dip
This is a salad, but I like it as a dip. Serve with tortilla chips.
ingredients
- Dressing:
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 3 to 4 Tbsp fresh lime juice
- 1 tsp salt
- 1/2 tsp freshly ground pepper
- Salad:
- 2 cans (15 oz. each) black beans, drained/rinsed
- 1 can (large) corn
- 1/2 cup chopped fresh cilantro
- 1 small red onion, chopped
- 1 avocado, pitted/peeled, chopped
- 2 large tomatoes, peeled/seeded and chopped
- 2 fresh jalapeno’s, seeded and chopped
directions
Mix salad items. Mix dressing items. Pour dressing over salad, toss gently to coat.
