Mediterranean Swai Fillets
This quick and colorful dish features Swai, a tender mild-flavored fish from Vietnam. It is much like sole in texture but less expensive. You can substitute any white fish and adjust the broiling time accordingly.
ingredients
- 2 lbs (4) swai fillets
- 1/4 cup ranch dressing
- 1/3 cup pine nuts
- 2 Tb olive oil
- 1 clove garlic, minced
- 1/2 chopped tomato
- 2 Tb capers
- 3 Tb sliced black olives
- Juice of a wedge of lemon
- 1 Tb butter
- 3 Tb fresh parsley, chopped

Preheat the broiler, and lay out the swai fillets in a single layer on a pan coated with cooking spray. Coat the top of each piece with about a tablespoon of ranch dressing. Broil 10 minutes or until done.

While the fish is cooking, heat up a medium frying pan and toss the pine nuts until toasted.

Add olive oil and garlic. Stir until garlic is lightly browned. Add tomato, capers and olives and stir until heated through.

Add a generous squeeze of lemon juice and remove from heat. Stir in butter until just melted and sauce thickens.

Pour over cooked fish. Sprinkle with fresh parsley and serve.
