Dad's Stuffing
ingredients
- 2 bags of crouton cubes
- 3 TB butter
- 6 oz chicken liver cut into 1/3" pieces
- 1&1/2 lbs sweet Italian sausage
- 1 large onion chopped
- 2 large stalks of celery chopped
- 1 TS thyme
- 1 TS rosemary
- 1&1/2 TS salt
- 1&1/2 TS fresh ground pepper
- 2 large eggs lightly beaten
- 1 cup chicken broth
- 1 cup cranberry juice
- 1/3 cup parsley

Preheat oven at 350 degrees.

In a large skillet, melt 1 TB butter, add liver and cook on high, turning once until brown (about 1 minute). Set aside in large bowl.

Brown sausage in skillet (about 10 minutes), add to liver.

Melt remaining butter in skillet and add onions and celery on low, saute until soft (about 15 minutes). Stir in herbs and cook 1 more minute. Add onion mixture to meat and bread, season with salt and pepper.

LET COOL!

Stir in eggs, broth, parsley and cranberry juice (gradually).

Place mixture in a baking pan, cover and bake for 30 minutes. Remove cover and bake for an additional 15 minutes.
