Grandma Maggio’s Bologna and Peppers

  • 1 red bell pepper
  • 1 lb package of sliced beef bologna
  • 1 8 oz can of tomato paste
  • 1 cup water
  • 1/2 tsp Italian seasoning
  • 1/tsp dried Basil
  • 2 cloves garlic diced
  • 2 tbsp olive oil
  • salt to taste

    Place to olive oil in saute pan.

    Slice bell pepper into strips

  • 3

    Saute bell pepper in olive oil with minced garlic for 10 minutes. Cut bologna slices into quarters. Add Bologna to sauteed peppers and garlic and cook for 10 minutes until bologna is browned. Add can of tomato paste and water. Cover and simmer for 15 minutes and serve.
