Chicken Burritos
These are the best burritos ever. It takes some time, but it is so worth it!!
ingredients
- Chicken filling:
- 1 whole baked chicken, shredded
- 1 package (15 to 20) dried chilies
- 4 cloves garlic
- 1 can chicken stock
- salt and pepper to taste.
- Tortillas:
- 2 cups flour
- 2 tsp salt
- 4 to 6 tbsp shortening
- 1 cup water
- Extras:
- 1 can of re-fried beans, heated
- 1 avocado
- limes, quartered

Chicken filling:

Put chilies in pot of water and bring to a boil, let the chilies rehydrate for 20-30 minutes. Put them in a blender with the chicken stock and garlic. Blend until smooth, 2-3 minutes. Add salt and pepper to taste. Put in a large bowl and add shredded chicken.

Tortillas:

Put flour and salt in a large bowl and cut in shortening. Add water 1/4 cup at a time. (NOTE: YOU MAY NOT NEED ALL THE WATER SO ADD SLOWLY). When the dough is mixed, let sit covered with a damp cloth for 20 minutes.

Heat skillet, DO NOT coat with oil. Break off orange size piece of dough, coat with more shortening and flour. Roll out flat and put on the skillet. When bubbles rise, flip the tortilla. The tortillas should only cook for a minute or two on each side.

Putting it all together:

Take a tortilla and put some re-fried beans on the bottom. Add some chicken mixture and a piece of avocado. Squeeze a piece of lime on top and enjoy!!
