Mini Reuben Pizzas
ingredients
- 4 oz. thinly sliced deli corned beef (about 1 cup)
- 3/4 cup (3 oz.) shredded Swiss cheese
- 1/4 cup Thousand Island dressing
- 1 garlic clove, pressed
- 4 flat pita bread without pockets
- 1 can (8 oz.) sauerkraut, drained and squeezed dry
- 1 Tbsp fresh snipped parsley
directions
Preheat oven 425°. Chop corned beef and toss with Swiss cheese. Combine dressing garlic, mix well and spread on pita bread, top with sauerkraut. Sprinkle corned beef and cheese mixture. Bake 10-12 minutes until cheese is melted and edges are slightly browned. Sprinkle fresh parsley over pizzas and serve warm.
