Traci's Apricot Cake

- 1 package of white cake mix
- 1 1/4 cup water
- 3 eggs whites
- 1/3 cup vegetable oil
- 1 tbsp grated orange peel
- t tsp. orange or lemon extract
- 2/3 cup apricot preserves
- Frosting;
- 1/2 cup butter
- 3 1/2 cups confectioner’s sugar
- 1/3 cup orange juice
- 1/4 cup chopped pecans

In a mixing bowl, combine the first six ingredients; beat on low speed for 30 seconds or until moistened. Beat on high for 2 minutes.

Poor into two greased and floured 8 inch round cake pans. Bake 350° for 30 to 35 minutes, or until toothpick inserted near center comes out clean. Cool for 10 minutes; remove from pans to a wire rack to cool completely.

Spread apricot preserves onto one cake; put second cake on top.

For frosting; in heavy saucepan, cook and stir butter over medium heat for 7 to 8 minutes or until golden brown.

Pour into a mixing bowl, add 3 cups confectioner’s sugar and orange juice. Beat until smooth. Add enough of remaining sugar to reach spreading consistency. Spread frosting over cake. Sprinkle with nuts. Store in refrigerator.
