Cheesy Tomato Ziti
ingredients
- 1 lb. sausage (sweet or spicy...whatever you’re in the mood for)
- 3 tbsp of oil
- salt
- 4 tomatoes
- 2-3 cloves of garlic (I used 3)
- small package of goat cheese (can’t remember the exact measurement, but one of those small tubes)
- 1/2 cup of parsley
- 1 box of ziti

Boil water with salt to taste.

In a large pan, put whole sausages in 1 tbsp of oil. Brown them, then take them out and slice into bite-sized pieces.

Mince garlic and slice tomatoes.

Put the ziti in the boiling water.

Put cut sausage back into large pan with 2 tbsp of oil. Cook for one minute, then add garlic. Cook for one more minute, then add all tomato. (It seems like a ton of tomato, but there’s no sauce so it’s actually perfect.) Cook for 3-4 minutes...enough time that the tomato releases it’s juices but retains it’s color.

Put sausage/garlic/tomato mix in large mixing bowl along with ziti. Add shredded parsley and all goat cheese. Mix it up. Eat!!
