Grandma Anna Palazzolo's Rice Pizza

  • 3 cups cooked white rice
  • 2 eggs
  • 1 cup grated mozzarella cheese
  • 1 15oz tomato sauce
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 2 Tablespoons grated parmesan cheese
Save a shopping List


Combine rice, eggs and mozzarella cheese. Press firmly into two greased 9-inch pie pans. Bake for 20 minutes at 450. Combine sauce and spices. Spread sauce over rice, top with mozzarella and parmesan cheeses. Bake 10 more minutes. Cut into wedges. Serve warm or at room temperature.
