Artichoke N Cheese Stuffed Chicken Breasts
A favorite at our house.
ingredients
- 1 jar marinated artichoke hearts drained
- 1/4 cup cheddar cheese
- 1 package cream cheese
- 1/4 cup chopped fresh chives
- 1 1/2 tsp chopped fresh thyme
- 1 1/2 tsp grated lemon peel
- 6 skinned, boned chicken breast halves
- 1/4 tsp pepper
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese

Drain artichoke hearts, saving liquid for later, and dice artichokes.

Mix diced artichoke hearts with cream cheese, cheddar and chives

Cut a horizontal slit in thickest portion of each chicken breast half to form a pocket. Stuff about 1/4 cup artichoke mixture into each pocket. Sprinkle chicken with pepper.

Place chicken breasts in a 9x13 pan. Brush on reserved artichoke liquid mixed with 1/2 teaspoon thyme, and 1/2 teaspoon lemon peel.

Sprinkle on bread crumbs mixed with Parmesan Cheese.

Cover with foil and bake at 325 for 45 min. remove foil during last 10 minutes to brown crumbs.
