Glazed Pineapple - Carrot Cake
ingredients
- 3 eggs
- 1 1/2 c. sugar
- 1/2 c. oil
- 3/4 c. buttermilk
- 2 tsp vanilla
- 2 c. flour
- 2 tsp cinnamon
- 1 tsp soda
- 1/2 tsp salt
- 2 c. grated carrots
- 2 c. chopped nuts (walnuts or pecans)
- 1 c. flaked coconut
- 1 (8 oz) can crushed pineapple, drained
- 1 c. raisins (optional)
- Glaze
- 2/3 c. sugar
- 1/3 c. buttermilk
- 1/3 c. butter
- 2 Tbs light corn syrup
- 1 tsp vanilla

Grease and flour 9x13 inch pan. Combine dry ingredients, mix well. Beat together eggs, sugar, buttermilk, oil and vanilla. Add flour mixture, blend until smooth. Fold in carrots, nuts, coconut, pineapple and raisins.

Bake at 350 degrees for 45 minutes or until sides pull from side of pan. Remove from oven, poke holes on top. Pour half of buttermilk glaze over cake. Let stand a minute to absorb. Pour rest over cake.

Glaze: Combine all ingredients except vanilla. Bring to a boil and simmer over heat for 5 minutes stirring constantly. Remove from heat, add vanilla and cool before pouring over cake.
