Mom's Upside Down Cake
A Classic!
ingredients
- Batter:
- 1/2 Cup Butter
- 1 1/2 Cups Sugar
- 2 Eggs
- 2 1/2 Cups Flour
- 1/2 Teaspoon Salt
- 2 teaspoons Baking Powder
- 1 Cup Milk
- 1 Teaspoon Vanilla Extract
- Topping:
- 1/2 C Butter -- melted
- 1 C Brown Sugar
- 1 Can Pineapple Rings or 1 quart other fruit
directions
Step 1: Preheat oven to 350 °
Step 2: In baking pan 9x13 inches) melt 1/2 cup butter add 1 cup brown sugar - spread over bottom of pan and arrange pineapple rings on top.
Step 3: Combine remaining ingredients and pour batter over fruit in pan.
Step 4: Bake at 350 ° until golden and toothpick inserted into cake comes out clean.
notes
Variation: Omit pineapple. Add one pint of blueberries to batter and scatter some on bottom of pan in place of pineapple rings. Serve with lemon sauce.
