Red Lentil Soup
Garnish this dish with fresh cilantro or mint.
ingredients
- 1 1/2 cups red lentils
- 3 tablespoons olive oil
- 1 large onion chopped
- 2 tablespoons coriander
- 2 teaspoons cumin
- 2 teaspoons fresh ginger grated
- 1/2 teaspoon tumerie
- cayenne pepper to taste
- 6 cups stock
- 1 1/2 cups fresh, diced plum tomatoes
- 2 tablespoons lemon or lime juice
- salt & pepper to taste
directions
Saute onion in oil till soft (do not brown). Add spices and cook for 3 minutes. Add stock and lentils and boil. Lower to a simmer for 30 to 45 minutes till tender. Blend. Then add juice, tomatoes and salt & pepper.
