Pat's Pumpkin Dessert
ingredients
- Crust:
- 2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup margarine or butter melted
- Cheesecake layer:
- 2 eggs beaten
- 3/4 cup sugar
- 8 oz. cream cheese softened
- Pumpkin Layer:
- 3 egg yolks
- 3 egg whites
- 2 cups pumpkin
- 1/2 cup sugar (measure into 2 1/4 cup measures)
- 1 tsp salt
- 1 tsp. cinnamon
- 1/2 cup milk
- 1/4 cup boiling water
- 1 pkg gelatin
- Topping:
- 1 lg carton of cool whip
- 1/2 tsp. nutmeg

Mix the graham crumbs, sugar and melted butter and pres into a 9 x 13 pan.

Combine the cream cheese, sugar and the beaten eggs with mixer. Pour over the crust layer and bake at 350° for 20 minutes. Then cool.

Whip egg whites until soft peaks are formed. Add 1/4 cup sugar slowly and beat into the egg whites. In a measuring cup combine the boiling water and gelatin.

Cook the pumpkin, egg yolks, sugar, salt, cinnamon and milk in a pot until this thickens.In a large bowl add pot mixture and then fold in the egg white mixture. Once combined pour over cheesecake layer. Place in refrigerator and allow to cool and set.

Once cooled pour cool whip topping on the top and sprinkle nutmeg.
