Chicken Chili
ingredients
- 2 tablespoons oil
- 1 lb. chicken breast, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (14 oz) can diced tomoatoes
- 1 (14 oz) can chicken broth
- 1/2 tsp. oregano
- 1/2 tsp. ground coriander
- 1/4 tsp. ground cumin
- 1 (15 oz) can northern beans
- 2 cups frozen corn
directions
Heat oil in pan; add chicken and cook until starts to brown. Remove and set aside. Add onion and garlic in pan; saute until soft. Stir in tomates, broth, oregano, coriander, and cumin. Bring to a boil and simmer 10 minutes. Add chicken, beans, and corn. Return to a boil, reduce heat and simmer 5 mintes. Season with salt and pepper.

Serve with shredded cheese, chopped green onion and sour cream.
