Peanut Butter n' Jelly Mini Muffins
Packed with peanut butter flavor, they’re a fun and easy way to start off the day, to serve a deliciously different lunch...or to share an after school snack!
ingredients
- 1 c flour
- 1/3 c packed brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1/2 c vanilla yogurt
- 3 Tbsp creamy peanut butter
- 2 Tbsp vegetable oil
- 3 Tbsp strawberry or grape jelly

In a large bowl, combine flour, brown sugar, baking powder, baking soda and salt. In a small mixing bowl, beat the eggs, yogurt, peanut butter and oil on low speed until smooth; stir into the dry ingredients just until moistened. Fill greased or paper lined mini muffin cups half full. Top each with a 1/4 tsp jelly and remaining half batter.

Bake at 400° for 10-12 min or until golden brown. Cool for 5 min before removing from pans to wire racks.
**Muffins may be baked in regular size muffin cups for 16-18 min; use 3/4 tsp jelly for each instead of the 1/4 tsp. Recipe then makes 10 muffins.
