Roasted Potatoes with Garlic, Lemon & Oregano
ingredients
- 3 Lbs. baking potatoes, peeled and cut into 1 1/2 inch cubes
- 1/2 cup olive oil
- 4 cloves garlic, minced
- 1 1/2 tsp. oregano, dried & crumbled
- 1 tsp. salt
- Freshly ground pepper
- 1/2 cup chicken stock
- 1 tbsp. tomato paste
- 1/3 cup fresh squeezed lemon juice
- 2-3 tbsp. fresh oregano

Preheat oven to 400°.

Place the potatoes in a single layer in a 13 x 9 inch baking dish. Pour the oil over the potatoes. To the potatoes add the garlic, dried oregano, salt and pepper to taste.

Toss well to coat with oil.

Bake the potatoes for 15 min. Add the stock, toss and bake for another 10 minutes.

Add lemon juice; bake for 15 minutes or until potatoes are cooked through.

Sprinkle with fresh oregano and serve at once.
