ingredients

  • 1 (15 ounce) can black-eyed peas (drain, rinse and let dry)
  • 1 (15 ounce) can black beans (drain, rinse and let dry) drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 (4 ounce) can diced jalapeno peppers
  • 2 tomatoes, chopped
  • 1/4 cup cilantro, chopped
  • 1 clove garlic, chopped
  • 3 limes juiced
  • 1 tsp salt
  • 1 tsp black pepper

directions

In a medium bowl, combine all ingredients and mix well. Cover, and refrigerate overnight to blend flavors.
