Uncle Joe(Dominic & Anna's son) Palazzolo's Caesar Salad

ingredients
- 2 heads Romaine lettuce
- 2 eggs (or 1 heaping Tablespoon of mayonnaise)
- 1/2 cup olive oil
- 1 teaspoon salt (or worcestershire sauce)
- 2 cloves garlic
- 1/2 teaspoon dry mustard
- juice of 1 lemon
- 1/4 teaspoon lemon zest
- dash hot sauce
- 1/2 can anchovies chopped (or 3 inches anchovy paste)
- 1/2 cup grated cheese
- black pepper
- croutons

Break lettuce into large bowl. Coddle eggs (set in hot tap water for 1 minute) and break over lettuce. Toss until egg disappears. Add each ingredient individually, tossing after each ingredient. Top with croutons.

Optional recipe - Put all dressing ingredients into a jar. Shake until mixed. Pour over lettuce and toss.
