Chocolate Raspberry cake with pistachios
This is something I figured out how to make when I saw a picture of it the firs time I picked up a Gourmet Magazine
ingredients
- 1 Box chocolate cake mix
- 1 egg
- vegetable oil
- Raspberry extract
- 1/4 cup Raspberry preserves
- 2 tubs chocolate frosting
- 3-4 cups chopped pistachios
- Fresh raspberries(enough to go around the top edge of the cake)

1. Make cake mix as directed and add 1 tsp Raspberry extract

2. Spray 2 round cake pans with non-stick cooking spray and lightly flour

3. bake cake mix as directed

4. Let cool for at least 2 hours

5. using a serrated knife or cake leveler make sure both cakes are level
- 6
6. Spread the preserves on the top of one of the cakes then place the other cake on top of it.

7. Frost the whole cake with the chocolate frosting. Coat the side of the cake with the pistachios and place the raspberries around the top

* If using for a formal occasion you may add some shaved chocolate on the top for a little extra fancy
