Hearts of Palm Salad
This is a unique salad, and great accompaniment to Jerk Chicken or other Caribbean meals.
ingredients
- 1 (14-oz) can hearts of palm (not salad-cut), drained
- 1/4 medium red onion, thinly sliced
- 1/4 cup coarsely chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 3/4 teaspoon black pepper
directions
Thinly slice hearts of palm on the diagonal and put in a colander along with sliced onion. Rinse well under cold water and pat dry. Transfer to a large bowl and toss together with remaining salad ingredients.
