Low Fat Chimichangas
ingredients
- 1 lb ground turkey
- 1 med chopped onion
- 2-3 cloves garlic, minced
- 1 tbsp chili powder
- 1 tbsp cumin
- 2 tsp oregano
- 1 small can diced green chilis
- 1 cup tomato sauce
- 1 cup reduced fat cheddar cheese
- fat free canned refined beans

Brown ground turkey with onion and garlic. Add chili powder, cumin, oregano, cook 2 minutes. Add tomato sauce and green chilies, simmer for 3-5 minutes. Remove from heat and stir in cheese. Spread a spoonful of beans down middle of tortilla and then top with meat mixture (depending on tortilla size: 1/2 c filling for big tortillas, 1/4 c for small). Fold tortilla up like a chimichange, so that all four sides are tucked in. Place on a large cookie sheet and spray tops with cooking spray. Back at 500 for 5-7 minutes or until tortillas are brown.
