Miss Lis's Mornin' Migas
We know firsthand from our ACL trips that Paxton’s mom can cook. As you know, her food is always delicious, so I asked her to send some of my favorites. This is her recipe for “Migas.” Great for a post-graduation brunch on Rittner or any time really.
ingredients
- 6 Corn tortillas
- 1/2 onion, chopped
- 2-3 garlic cloves
- 8 eggs
- 1 cup cheddar cheese
- 1 Tomato, chopped
- Jalapeno’s, chopped (to taste)
- Salsa
directions
Chop tomato, jalapenos, and onion. Heat vegetable oil in skillet. Add onion or garlic, cook until tender. Add eggs and cook, stirring occasionally to scramble. Mix 1/2 cheese, 1/2 tomatoes, and chopped jalapeno or Serrano pepper in with eggs. Transfer to oven proof dish or skillet. Sprinkle remaining cheese and tomatoes on top. Bake or broil until cheese melts. Serve with salsa and tortillas.
