Banana Bread
ingredients
- 1 egg
- 1/2 c butter or margarine
- 3/4 c. sugar
- 1 tsp baking soda
- 1 tsp salt
- 2 c flour
- 3 bananas

Mash bananas with a fork.

Cream the sugar and butter together then add the egg, beating well.

Add the bananas and soda dissolved in a little water (I use a jigger and don’t fill). Mix well.

Sift the flour and salt together and add the dry ingredients gradually to the banana mix.

Pour into greased and floured loaf pan. Mom always used a Pyrex pan so that’s what I use. A metal pan may bake faster so watch the time.

Bake at 350° for 1 hour or until a toothpick inserted in center comes out clean and bread has separated a bit from sides of the pan. Cool in the pan about 15 minutes, then remove and cool on rack.
