Lemon Pepper Chicken
I first got this recipe off the back of a Rice-a-Roni box...I kept that flattened box for years!
ingredients
- 4 boneless, skinless chicken breast halves (about 1 pound)
- 1 tsp. paprika
- 2 T. butter, divided
- 1-5.9 ounce package Rice-a-Roni Chicken & Garlic
- 2 medium red or green bell peppers, sliced
- 1/2 cup chopped onion
- 2 tsp. lemon juice

1. Sprinkle chicken with paprika.

2. In large skillet, over medium-high heat, melt 1 T. butter.

3. Add chicken; cook 2 minutes on each side or until brown.

4. Remove from skillet and set aside.

5. In same skillet, sauté rice-vermicelli mix as package directs, using remaining 1 T. butter.

6. Add 2 cups of water, chicken, pepper, onion, lemon juice, and Special Seasonings.

7. Bring to a boil.

8. Cover; reduce heat to low.

9. Simmer 15-20 minutes or until liquid is absorbed and chicken is cooked through.

10. Let stand 5 minutes before serving.
