barrata cheese with fresh pesto drizzle

ingredients

  • for pesto...
  • 2 cups basil leaves, lightly packed
  • 1/2 cup grated pecorino cheese
  • 3 garlic cloves
  • 1/4 cup olive oil
  • for assembly...
  • 1/4 cup olive oil
  • 16 oz Burrata cheese
  • 1 cup yellow and red grape
  • tomatoes, but in half
  • basil sprigs
  • baguette, sliced
  • sea salt

directions

    to make pesto...

  • 2

    add basil, cheese, and garlic into food processor and pulse until things are finely chopped. slowly add the oil while mixing and roughly puree. set aside.

    to assemble...

  • 4

    put 1/2 cup of the pesto on the bottom of a small serving bowl. thin slightly with 2-4 T of water, 1 T at a time, and season with salt.

    drain Burrata, if necessary, and place in the dish. gently break open the cheese at the top and drizzle with the pesto. surround with tomatoes and sprinkle with sea salt, garnish with basil sprigs and serve with sliced baguette
