Bread Crumb Salmon Cake Baked to a Crisp
ingredients
- 10oz. Salmon filet, Medium Diced
- 3 1/2 Cups of Panko Bread Crumbs
- 1 1/2 Cups of Mayonnaise
- 3 Tbs. Chopped Rosemary
- 1/4 cup of Lemon Juice
- 2 Tbs. Dijon Mustard
- 1/2 Cup Green Scallions
- 3/4 Cup Sun Dried Tomatoes
- 3 Tbs. Garlic Powder

1.Soak sundried tomatoes in oil for one day to rehydrate.

2.Dice Salmon filet.

3.Combine all Ingredients in large mixing bowl and mix well.

4.Portion into 6 servings and mold with ring.

5.Place on baking sheet and cook for 7 minutes in a 350° oven.
