Bread Crumb Salmon Cake Baked to a Crisp

ingredients

  • 10oz. Salmon filet, Medium Diced
  • 3 1/2 Cups of Panko Bread Crumbs
  • 1 1/2 Cups of Mayonnaise
  • 3 Tbs. Chopped Rosemary
  • 1/4 cup of Lemon Juice
  • 2 Tbs. Dijon Mustard
  • 1/2 Cup Green Scallions
  • 3/4 Cup Sun Dried Tomatoes
  • 3 Tbs. Garlic Powder

    1.Soak sundried tomatoes in oil for one day to rehydrate.

    2.Dice Salmon filet.

  • 3

    3.Combine all Ingredients in large mixing bowl and mix well.

  • 4

    4.Portion into 6 servings and mold with ring.

  • 5

    5.Place on baking sheet and cook for 7 minutes in a 350° oven.
