salmon with leeks and roasted-lemon vinaigrette
ingredients
- 2 leeks, sliced
- 2 lemons cut in half
- 4 unpeeled garlic cloves
- 3 T. olive oil
- 4 6 oz. pieces of salmon
- 1 t. honey
- 1 t. fresh thyme
- 12 oz. mixed greens
- salt and pepper to taste
directions
Heat oven to 400 degrees. In a roasting pan, toss 1 T. oil, leeks, lemons, garlic, and salt and pepper. Roast for 10 minutes. Nestle salmon in mixture and cook until salmon is opaque. Take out of the oven. Squeeze garlic from skins into a bowl. Mash into a paste. Squeeze the lemon pulp into a bowl. Stir in the honey, thyme, 2 T. oil, and salt. Place the salmon and leeks on greens and drizzle with the dressing.
