Chicken Taquitos
Recipe from mom, Patti Pulsifer.
ingredients
- 1 lb. chicken breast
- 1 cp. water
- 1/2 cp. minced green onions
- 1 tsp. minced garlic
- 3-4 cps. oil
- 1 cp. finely chopped tomatoes
- 6 tbsp chicken broth
- 2 tsp flour
- 1/2 tsp. cumin
- 1/2 tsp. oregano
- 1/2 tsp. chili powder
- 1/2 tsp. salt
- 1 dozen corn tortilla
- lettuce
- sour cream
- guacamole
- salsa
directions
Simmer chicken in water for 20-30 minutes. Remove from water and cool. Shred chicken with a fork. Saute onion and garlic in 1 tbsp of oil for 1-2 minutes. Stir in chicken, tomatoes, chicken broth, cumin, oregano,chili and salt. Simmer 3-5 minutes. Heat about one inch of oil in skillet. Dip tortillas in oil for about a minute to soften the shell; drain on paper towel. Spoon 2 tbsp of chicken mixture on to tortilla and roll tightly. Secure with toothpicks. Fry rolled up tortillas at 375 degrees (needs to be very hot oil)until golden brown; keep warm in 300 degree oven. Take toothpicks out and serve on a bed of lettuce with guacamole, salsa and sour cream.

This takes awhile to prepare but it’s well worth the trouble.
