Overnight Eggs
ingredients
- 1 lb link sausage, cooked and cut into bite-sized pieces
- 6 eggs, beaten
- 1 cup milk
- 3/4 cup shredded cheddar cheese
- 2 plain bagels, cut into bite-sized pieces
- 1 tsp dry mustard
- 4 green onions, thinly sliced
- 1/2 red pepper, chopped
- Salsa (optional)

In a large bowl, mix together all ingredients (except salsa). Cover and refrigerate overnight.

The next morning, preheat oven to 325°. Stir the mixture and pour into a greased 13x9-inch dish. Bake, uncovered, for 45 minutes. Let set for 15 minutes. Cut into squares and serve.
