Tropical Lobster Salad
ingredients
- 2 avocados, peeled and cubed
- 4 tomatoes, seeded and cubed
- 2 mangoes, peeled and cubed
- 1/2 c. green onion (scallions)
- Juice and zest of 1 orange
- Juice and zest of 2 limes
- 1 Jalapeno, finely chopped
- 1/4 c. champagne vinegar
- 1/8 c. honey
- 1/2 c. olive oil
- S&P to taste
- 1&1/2 lbs. cooked lobster meat cut into large chunks
- 8 c. greens
- flat leaf parsely chopped for garnish

Place avocados, tomatoes, mongoes & green onion in a large bowl. In a small bowl whisk juices, zests, jalapeno, honey vinegar and olive oil. Season to taste with S&P.

Pour enough dressing over fruit to coat well and toss gently. Toss greens with just enough dressing to coat. Place greens on plates and top with fruits. Drizzle lobster with small amount of dressing and arrange on top of fruit. Garnish with remaining lime zest and parsley.
