Cranberry Relish
ingredients
- 4 cups whole cranberries
- 1 tbsp ginger, grated
- 1 1/2 cups sugar
- 1 tbsp orange rinds, grated
- 1 cup orange juice
- 1/4 cup water
- 1/2 cup pecans toasted and chopped

Wash and cull cranberries. Then bring sugar, ginger, orange rind, and water

to a simmer over medium heat until sugar dissolves.

Add cranberries, cook until berries pop (or open), stirring occasionally,

about 5 minutes.

Stir in pecans, pour everything into a bowl and let cool.

Cover tightly and refrigerate.
