Miss Julie's Sick Soup
Great soup for when you’re feeling under the weather
ingredients
- 4 skinless/boneless chicken breasts
- 13 cups of water
- 13 chicken boullion cubes
- 1 box frozen chopped spinach
- 1 dozen large eggs
- 3 celery stalks chopped thin
- 4 carrots chopped thin
- 1/4 pound cooked orzo noodles
directions

Cook chicken in water, bring to a boil and add boullion cubes, carrots and celery. Turn down and simmer for an hour and a half to two hours. Remove chicken breasts, reserve for another use (chicken salad, chicken dip). Bring broth to a boil and add spinach. Reduce heat and cover. Beat 12 eggs with a tiny bit of milk and 4 to 5 tablespoons of grated romano or parmesan cheese. Bring soup to a boil again and make sure spinach is broken up throughout soup. When the soup starts to boil, drizzle egg mixture into it slowly, stirring until all of the eggs are cooked. Should resemble a Egg Drop soup.

In separate pot cook orzo according to package directions. Add to soup. Then serve.
