Sweet Potato Casserole

ingredients
- 4 sweet potatoes, washed and scrubbed
- 1/4 - 1/2 cup light brown sugar
- 1/2 cup chopped walnuts (optional)
- 1/2 pkg. miniature marshmallows
- 1/2 - 1 stick of butter

Place potatoes in large pot and pour water over them, enough to cover potatoes. Cook until water boils, then reduce heat to medium and cook covered until potatoes are tenders when pierced with a knife or fork.

Drain water. Carefully peel potatoes and place in large bowl.

Mash potatoes. Add butter, brown sugar, and nuts, gently mixing well.

Place mixture in casserole dish. Top with marshmallows.

Bake at 350° until marshmallows are nicely browned.
