Zucchini Parm Crisps

- 1 lb zucchini (2 medium)
- 1 tbsp olive oil
- 1/4 cup parm cheese, grated
- 1/4 cup plain dry bread crumbs
- 1/8 tsp sat
- ground pepper

Preheat oven to 450 degrees. Coat a baking sheet with cooking pray.

Slice the zucchini into 1/4 in thick rounds. In a medium bowl, toss the zucchini with the oil. In a small bowl, combine the parm, crumbs, sat, and a few turbns of pepper. Dip each round into the parm mixture, coating it evenly on both sides, and place in a single layer on the baking shee. Bake the zucchini rounds until browned and crisp, 25-23 min.
